Southwest Smoked Chicken Wrap Recipe

Ingredients

Rub

3 tsp Chilli Powder
2 tsp Paprika
½ tsp Cayenne Pepper
¾ tsp Cumin
½ tsp Coriander
1½ tsp Garlic Powder
1 tsp Onion Powder
1 tsp Kosher Salt
1 tsp fresh Ground Pepper

Chipotle Sauce

1 cup prepared Ranch dressing
Pureed Chipotle Pepper in Adobo sauce to taste

Wrap

4 flour tortillas
Lettuce
Diced tomatoes
1 green bell pepper, halved & 1 red bell pepper, halved
2 tsp Oilve Oil
1 lb chicken breasts

Preparation

  1. Apply rub to chicken breasts and refrigerate overnight.
  2. Prep smoker to 275°F.
  3. Place chicken breasts, bell peppers and onion on the smoker.
  4. Smoke vegetables for 1 hour. Remove all vegetables from the smoker.
  5. Smoke chicken breasts to 160°F, remove from smoker and let rest.
  6. While chicken breasts are resting, slice and sauté bell peppers and onions in Olive Oil until translucent.
  7. Slice or pull chicken breasts. In one flour tortilla add the sliced or pulled chicken breasts with lettuce, tomatoes, peppers and onions. Add Chipotle Ranch inside or leave on the side for dipping.
