Smoked Prime Rib Recipe

6 Tbsp of kosher salt
3 Tbsp of black pepper
2 Tbsp of garlic powder
2 Tbsp of brown sugar
1 prime rib roast (6-8lbs)
12-15 carrots

  1. Preheat smoker to 350°F
  2. In a bowl, combine salt, garlic, pepper and brown sugar. Completely coat roast evenly with seasoning.
  3. Line a tray with aluminium foil and cover tray with a row of carrots. Place roast on top of carrots
  4. Smoke at 350°F for 1 hour. Reduce temperature to 275°F and cook for 2 hours or until desired internal temperature (120°F for Rare or 130°F for Medium).
  5. Once you have removed the prime rib, cover it with aluminium foil and let rest for 15 to 20 minutes before cutting. This will help keep the prime rib warm and juicy.
  6. Serve and enjoy!
