Smoked Chorizo Queso Recipe



16 oz Velveeta cheese
4 oz cream cheese
10 oz Rotel
1 lb chorizo
suggested wood chips: Apple


  1. Preheat smoker to 250°F and add wood chips.
  2. Fully cook chorizo in a skillet, drain grease if desired.
  3. Cube Velveeta and cream cheese.
  4. Combine Velveeta, cream cheese, rotel, and chorizo in a disposable aluminium pan.
  5. Smoke for 1 hour or until completely melted, mix every 20 minutes.
  6. Enjoy with tortilla chips and good company!
